Coconut beef

Ingredients

  - 1 tbsp oil
  - 1 stalk of lemon grass
  - 1-inch piece of grated or finely chopped ginger
  - 1 red chilli finely chopped
  - 250g beef strips
  - Large handful sliced shitake mushrooms
  - 4 kaffir lime leaves finely sliced
  - 200ml coconut milk
  - 2 tsp fish sauce
  - 1 tsp sugar
  - Handful of Thai basil leaves
  - Small bunch of chopped colander leaves

Instructions

  Heat the oil in a wok. Add the lemon grass, ginger and chilli and cook for 1 min. Add the beef and stir-fry for a further 3 to 4 mins. Add the shitake mushrooms and cook for further 1 to 2 mins. Add the lime leaves, coconut milk, fish sauce and sugar and cook for further 2 minutes. Stir through the basil and coriander leaves. Serve with steamed rice.
