Chicken-quinoa salad with feta cheese

  2 tbsp white vinegar
  1 tbsp lemon juice
  1 tbsp olive oil
  1 clove garlic, minced
  1/4 tsp salt
  1/4 tsp pepper
  1 cucumber
  1 pint grape tomatoes
  1/4 large red onion
  1/4 cup fresh dill
  2 1/2 cup cooked quinoa (2/3 cups dry quinoa)
  4 cooked chicken breasts
  1/4 cups feta cheese


  In a large bowl, combine vinegar, lemon juice, olive oil, minced garlic, salt and pepper. Slice the cucumber and tomatoes, chop the onion and dill finely. Add the vegetables to the bowl, mix to combine and let stand for 10 minutes.
  Cube the cooked chicken breasts. In another bowl, combine cooked quinoa and chicken breasts, and microwave until warm, for about 3 minutes. Add the vegetables and the marinade to the bowl, mix to combine.
  Top with feta cheese and serve immediately.
