Beef and vegetable meatloaf

  1,5 pounds ground beef
  3 egg whites
  1/2 cup bread crumbs
  1 tbsp tomato paste
  1 zucchini
  1/2 sweet pepper
  1 onion
  3 garlic cloves
  1 tsp dried oregano
  1/2 tsp salt
  1/2 tsp pepper


  Wash the zucchini and shred preferably using a medium shredder. Wash and peel onion and garlic and chop finely. Wash and finley chop the sweet pepper. Line a loaf pan with foil.
  In a large bowl combine shredded zucchini, chopped vegetables and all other ingredients, Mix throughly. Transfer mixture to the prepared loaf pan, press flat.
  Bake at 375F for approx. 1 hour. Remove from the oven, let stand for 10 minutes, then slice and serve.
