Sausage and squash bake

  2 tbsp vegetable oil or butter
  2 tbsp flour
  2 cups milk
  0,5 tsp salt
  0,5 tsp pepper
  6 oz cheese - goat or other strong-tasting
  1 pound cubed butternut squash
  12 oz macaroni
  12 oz sausage. casings removed if necessary


  Preheat the oven to 350F.
  Bring a large pot of water to boil. Add cubed squash and cook for 5 minutes, Then add the macaroni and cook for 5 more minutes. Macaroni should not be tender at this point! Drain and set aside.
  In a small pot melt 1 tbsp butter or heat 1 tbsp oil over medium heat. Stir in flour and cook for 1 minutes, stirring constantly. Pour in milk, add salt, pepper and cubed cheese, bring to simmer, stirring constantly. Set aside.
  In a large skillet heat the remaining oil or butter. Crumble the sausage into the skillet and cook, stirring occasionally, for 4-5 minutes.
  In a large ovenproof pot combine the half-cooked macaroni and squash, noodles and cheese sauce. Mix well to combine. Bake at 350F for 20-25 minutes.
