Blueberry pancakes

  3 eggs
  3/4 cup milk
  3/4 cup plain yoghurt
  1/4 cup oil or softened butter
  2 1/4 cup flour
  3 tbsp sugar
  1 tsp baking soda
  1 tsp salt
  1/2 cup frozen blueberries
  3 tbsp oil for frying


  Put eggs, milk, yoghurt and oil or butter in a large bowl. Mix thoroughly. Add flour mixed with soda, sugar and salt, mix thoroughly. Add frozen blueberries, mix just to combine, do not overmix.
  In a large pan, preferably cast-iron, heat the oil on high heat. Decrease the heat to medium. Pour the batter onto the pan, using a very full tablespoon for each. Bake on both sides for 2-3 minutes, or until brown and cooked through.
  Serve hot with sour cream, blueberry jam, honey and maple syrup.
