Pork chinese-style

  700 гр. pork
  2 egg yolks
  2 tbsp soy sauce
  2 tbsp potato starch
  50 ml water
  4 tbsp potato starch
  salt to taste
  For the sauce:
  0,5 tsp ground ginger or 0,25 inch piece fresh ginger
  3 sweet peppers, cut iincto squares
  0,5 pounds pineapple pieces, preserve
  4 tbsp vinegar
  4 tbsp sugar
  4 tbsp ketchup
  2 tsp starch mixed with 2 tbsp water


  Cut the meat into cubes approx. 0,5 inch large. Mix with the egg yolks, soy sauce, 2 tbsp potato starch, water and salt. Let stand for approx. 2 hours.
  In a large pan heat 2 tbsp oil. Mix the meat with 4 tbsp potato starch until it is well covered, add more starch if needed. Fry the meat over high heat until golden-brown, do not overcook! Remove the meat from oil and pat with paper towels to remove excess oil.
  Into the same pan add ginger and fry for 30 seconds. Add sweet peppers and fry for approx. 2 minutes. Add pineapple and continue cooking for another 2 minutes. Add vinegar, sugar and ketchup, mix well. As soon as the mixture starts boiling, add starch mixed with water and return the meat to the pan. Mix thoroughly until the sauce thickens covers the meat well.
  Serve immediately with boiled rice or noodles.
