Home-made marshmallows

Ingredients
6 tsp gelatine
0,5 cup water
2 cups sugar
0,75 cup hot water
red food coloring
vanilla flavoring
0,25 cups sugar powder
Instructions
In a large pot combine gelatine and 0,5 cups water, let stand for 3-5 minutes to soak. Add hot water and sugar, bring to boil. Reduce the heat to low and simmer for 20 minutes, stirring frequently.
Remove from heat, add food coloring and vanilla flavoring. Mix thoroughly to combine. Beat using electric mixer on high speed for 10 minutes, until the mixture is thick and creamy.
Line a rectangular baking tray with baking paper, pour the mixture in. Refrigerate overnight.
Cut the mixture into cubes. Pour sugar powder into a small bowl and toss the cubes in it, a few at a time, to prevent sticking.
