Rice and seafood pilaf

Ingredients

  2 onions
  1-2 cloves garlic
  1 tbsp vegetable oil
  0,5 pound frozen mussels (or other seafood if desired)
  1 cup rice
  2 cups water
  salt and pepper to taste

Instructions

  Peel the onions and cut into semicircles. Peel and mince the garlic cloves. In a medium-sized pan heat the oil and fry the onion and garlic on medium heat, stirring occasionally, for approx. 10 minutes, or until golden.
  
  Transfer to a pot. Add water, mussels salt and pepper, bring to boil, and cook for 2-3 minutes. Add the rice, stir to combine, bring to boil. Reduce the heat to low, cover and cook for approx. 20 minutes, or until the rice is done through.
