0,1 pound spinach
0,1 pound arugula
piece of leeks
0,3 cup milk
1 tbsp butter or oil
If using frozen greens, defrost. If using fresh greens, thoroughly wash and chop spinach and arugula and leeks.
In a small bowl whisk together eggs, milk, chopped greens, salt, pepper and rosemary. If desired, add finely cubed cheese, ham or other vegetables, e.g. pepper or tomato.
In a small pan heat the oil, then pour the egg mixture. Cover and cook on medium heat for 5-7 minutes, or until cooked through.
